Oat Cherry Bakewells

1/2 tsp almond extract
4 tbsp butter
1/2 cup honey
2 cups almond meal
1 cup rolled oats
1/2 tsp salt
1 beaten egg
1 cup thawed and drained cherries, slice in half (or other berries)
1 cup slivered or flaked almonds (optional)
  • Preheat oven to 375 F
  • Grease and line a small baking sheet
  • Melt honey, butter and almond extract together in a small pan
  • Mix the dry ingredients together in a bowl
  • Add melted honey etc. to dry ingredients and mix well
  • Add egg and mix
  • Add fruit and carefully incorporate without mashing the fruit too much
  • Transfer to the baking sheet and press firmly
  • Scatter and press down the flaked or slivered almonds
  • Bake for about 20 minutes or until firm and brown on top
