2 pints of water 2 bundles of wholewheat udon noodles 2 tablespoons of white miso paste 1 tablespoon of soy sauce or tamari 1 inch piece of ginger sliced A block of extra firm tofu cut into bite-sized cubes 2 handfuls of kale or spinach Bring the water to a boil Add all the ingredients except the kale Cook until the noodles are tender Add the kale Serve

3 cups of black beans, soaked overnight in cold water
3 carrots 4 stalks of celery 1 large onion 2 large garlic cloves 2 heaped teaspoons of cumin 1 32 fl oz carton of beef broth Finely chop the vegetables in a food processor Add to the crockpot Add all the other ingredients Mix well Cook on high for about 6 hours Eat with rice, salsa and greens, add to a burrito, eat as a side. |
