Sweetcorn Fritters

 1 cup plain all purpose flour
1/2 tsp salt
1 egg beaten
1 1/2 cups milk
1/4 tsp mustard powder mixed with a little water to make a paste
2 green onions finely chopped
1 cup sweetcorn
1/2 cup shredded cheese (cheddar or Jarlsberg work well)
2 tbsp butter
  • Mix everything in a big bowl to form a thick batter
  • Heat a large frying pan
  • Briefly rub some butter across the bottom of the pan
  • When it sizzles dip a 1/4 cup into the batter and pour into the frying pan
  • Cook until the top sets 
  • Flip and cook 
  • Transfer to a warm plate and continue to add butter and cook fritters until the batter is finished
  • Delicious with salsa
